Good Eats, Texas News, and also Some Bad News

We have eaten really well this week! Meals cooked by Chef George! I found a recipe above for pasta and chicken with spinach, lemon juice, wine, and parmesan. And tomato I think. I love this kind of pasta with a light lemony sauce. I like to throw a bit of chicken broth in too. George added toasted sour dough cheese bread.

Below is his jambalaya. Very good. We have leftovers and some is coming with me today for lunch.

Meanwhile in Texas

Guess who turned two months? Little Toot!

There’s also a new cat on the ranch. I think they try not to get too attached. Because they come and go sometimes. They live in a wild environment out there with coyotes and such. But they DID name him “Tamale”, lol. Because they fed him one as he was hungry and they didn’t have cat food.

We have both had a productive -but yet relaxing – week. George has moved a lot of things around in the basement in anticipation of the restoration guys coming out and fixing the ceiling downstairs. It’s so expensive but there is a lot of plumbing damage to fix from over the years. So we’ll be dropping a couple of grand on this adventure. They were coming yesterday but we’ve been pushed to Friday of this week.

We have relaxed for an hour or so after dinner with the doggies and watched a movie or read or played PC games. We watched KING CORN last night about the Iowa corn industry. It was interesting. I only fell asleep once, lol.

The week is going by fast. I’ve worked some each day (except for last night) after work, dusting or picking up, in an effort to get ready for Sunday’s life group. I’m nervous about it, but I think the one that has the most problem with the dogs is not coming. I hate it, but I also am not going to NOT have dogs, because of life group and George doesn’t want to board them for the day. So….there’s that. After 24 hours, I did have a couple of couples respond that they would be there. So that is good. We will eat well. 😉

I better get to work. I just move so much slower now and it takes me longer to do things, so I’m running about 30 minutes behind today but still determined to get my normal routine in – even if it takes longer. It’s so frustrating but soon I won’t be having to fight this battle over time.

Upsetting News

Speaking of fighting battles. My sister’s cancer has come back, metastasized into a nearby lymph node. Her radiation treatment starts in June. So far no other spots, but please keep “Kerrie” in your prayers.

    Glad you’re having a good week and I’m sure Sunday will go well. It’s going to be lovely when you get the basement ceiling etc sorted, you’ve waited a long time !…..The photos of the boys are great, they are going to be great pals once the wee one gets on his feet !!

      Sounds that easy doesn’t it? But, it’s not that easy. We would have to put them in bedrooms. Carpeted areas. I’m not sure if locked in if they would potty on the pads or carpet. Plus Dexter will scratch the door and walls. Not to mention constant barking including chihuahua barks which are annoying. lol 😂
