Friday Notes: My Thoughts on Food, Reading, and Life

Good morning! Sipping good coffee here this morning. Happy that it is Friday. The week has gone by quickly. It has been busy as they all are. I packed way more in each day on my list than I had time for. I had hoped since we were gone on Sunday to Life Group all afternoon last week, that I might be able to pick up some of the Sunday to do’s each day during the week, but just because I put it on the list did not mean I had more hours in the day to do them. So finally I just rolled them all to Saturday. And joke’s on me as I will be gone much of Saturday taking Mom to do her annual plant run and go to iHop. You know how much I love taking her to Lowe’s.

She has decided she wants to order a grill from Lowe’s and have it delivered (I can’t lift a grill, lol). She wants to start grilling out. She is almost 80 and pretty much glued to the recliner. But whatever. I promised her this day out to go eat brunch on her card. And Sunday is kindof a hard day to do church, grocery, out to eat and Lowe’s run all in one day. If it’s hard on me, I know it’s hard on her so we broke it into two days. It’s just hard trying to be taxi and meet the needs of two households. I. AM. TIRED. It’s just been a busy and taxing March. And in April I’ve not yet recovered from everything.

She also has decided she wants to order a bunch of photos from Shutterfly and wants me to do it. It sounds simple but her iPad is full in storage and she wants some from Facebook etc. So I’ll probably have to find them, save them, and do it from my computer. I have a photo project of my own that I have been trying to do for 2 years and can’t get to it. All I can say is “good luck with THAT”.

I can feel that my nerves are pretty much “shot”. I suppose the lack of rest and then sleep between 1 and 5 has not been easy. I feel like if ONE MORE THING is added to my plate, I will combust and lose it. I dread calling Mom each night because I know she’s going to be adding something else to the list, wanting this and wanting that. It’s not that it’s bad. We are all human and have wants, needs, and desires. It’s just that I don’t have much left to give. I’m just spent.

We had breakfast for dinner one night. It was really comforting. I’m so glad I can eat tomatoes again! The Romas have been good this week on eggs, pasta, and salads.

This was last night’s dinner. And after I took this pic, I put the Romas on it, some parmesan, and drizzled balsamic glaze across it. It’s fish, seafood ravioli, spinach soufflé, and at the bottom a basil pesto. I was afraid of it, but this was good. I don’t like the olive pestos and I think that I’ve had those before that were a green color and didn’t like it but this was great. I recommend fixing it with pasta though and tomatoes and tossing it. It was a little strong just “in a pile” but I put a little on each bite here. I love breaded fish. It was so good. We try to have fish once or twice a week. Usually it’s salmon but I do enjoy the breaded fish.

Quarter end is getting into its crunch time. I am a little worried but I *think* I have enough time. It remains to be seen depending on if one person gets me their info on time for the transport side of the business so I can do their returns. But I have been trying to knock the “little returns” out first. I tried to make progress yesterday and so many interruptions that it was ridiculous. So we’ll try again today. Normally my office is quiet, but give me a deadline and the devil is going to try to annoy me where I can’t get anything done – whether it be a computer issue, a person, a major problem, a Mom issue or appointment, or fill in the blank. It’s always something. Did I say how tired I was? I truly am tired of fighting with life to get things done.

Current Read

I started this on vacation. Now that we are home and back in “Real Life” I have had problems finding time to read, even just a little bit. Oh well. I’m looking forward to the day when I can finish it. It’s been pretty good. I’ll give it 4.2 stars.

It’s interesting enough to hold my attention. Although I got confused on the characters a bit. Throw too many characters at me at once in the beginning and it can be an issue. Especially if I am having long pauses between reading sessions b/c of you know, my life, lol. John Grisham books for example, I have to have a list of characters listed on a piece of paper I tuck into the book, with a little description. lol. They may appear in chapter 3 and not again until chapter 12 and I’ve already forgot who they are.

Coffee is good this morning. Video is finished, uploaded and thumbnail done. I’ve got to increase the quality of video though for YouTube. I want it to look good on bigger screens. It’s really probably going to be a 2025 project though I think. The iPhone is ok but it’s really pixelating on the bigger screen. Or maybe it just wasn’t through processing on YouTube yet for the higher quality. I don’t know.

So tomorrow’s video is us vacationing on the ranch. It’s good but a long one. I should have made 3 videos out of it instead of two, but I decided to just make it long and get it done. It took a lot of time this week to get it edited with almost 2 hours of footage and down to 49 minutes. So if no one watches it fine. I mainly wanted it for the memories. But it was a fun one. I think, anyway. It’ll be out at 7:00 a.m. in the morning CST.

Gotta go to work. I’m already running about 15 minutes late. But I have to steal time from wherever I can get it. I just can’t get everything in my life done.

But let me leave you with these wee ones. Look how long Little T is compared to Little Roo. I can’t wait to seem them again at Thanksgiving!

Also, George is feeling a little better. So far I’ve not come down with it. He promises it’s sinus and nothing else. It was the fever that worried me, but it was a sinus infection he said. Anyway he feels much better but then had to cut the yard yesterday and was back out in the pollen.

    You sure will beat work now as I type this, let’s hope today goes well and you end the week knowing you’ve at least survived it !!
