Managing Life with Grace and Ease….or Maybe NOT!

All we have done this week is WORK and EAT! So enjoy – this is about all I have for you today!

For TWO weeks in a row we’ve eaten at Chuy’s Tex Mex. Oh my gosh it’s so good. I love the enchiladas! I did not eat the rice nor the sour cream but I had plenty of the creamy jalapeño sauce.

I was ON for cooking dinner last night and fixed my friend Mia’s White Chicken Chili. It’s the easiest thing ever to throw together. I mixed the following together in a big soup pan and let it heat and then dinner is ready, served with shredded cheese and tortilla chips.

  • 2 cans navy beans
  • pkg of chili seasoning mix
  • 1 can rotel
  • 3 cans shoepeg corn
  • 2 (12.5 oz) cans of premium chicken breast
  • About a 1/2 carton of broth – enough to make it a soup!

I really like this soup! However, I was so full from lunch I only had one cup! But guess what is for lunch?

So, I slept in the other room last night. I went to bed earlier. I was fizzled out. I wanted uninterrupted sleep. I probably slept a little bit better as I went to bed earlier and was not met with loud snores during the night, but I still woke up and was awake for an hour and my arm was aching in two places. I had to get up and put what I call the “ICE cream” on it. LOL. It’s really “Icy Hot” cream. After that I went on to sleep. May have tossed and turned a few times. So sleep was not THAT much better in the other bed, but it was a little bit. I’m starting to think our previous bed in the guest room is more comfortable though as our bed gets hard by morning. I noticed it about two months in that our body impressions settled in at that point, but we’d already spent so much on it and it was a beast to get in the house. But one day we may have to have an upgrade. But I can tell you right now it won’t be through a discount from my work – sadly – as we just don’t have the ability anymore to pick it up and lift it and all that. So we’ll have to get it from a store that has delivery. But that is waaaaay down the road b/c we are getting the floors done first and then the kitchen upgrade is next! Life’s too short and we love to cook too much to have a kitchen from the 70’s. Come to think of it, life’s too short not to sleep good too. I think we just need an overhaul on the house altogether. We rarely upgrade anything unless it breaks, leaving us behind the times. Oh well I should finish the blog post before I get to the bathrooms, eh?

Ya’ll have a great weekend! I have a weekend at home planned. Things I want to do and work on in the office and around the house. George may have plans for us this weekend but I may not go. He is wanting to go hang with some people from his work. We were planning a weekend at home all along since we are gone next week. So if happens I have to decide whether to go or not. Frankly not even sure I’m invited. Several of them supposedly ordered some hot chip in a coffin and they were going to eat them together and watch each other and laugh? I think I’d rather make a video and be geeky. I really wasn’t planning on getting out this weekend but – who knows. If he goes, and I stay home – I may go do a quick shopping excursion and hit my favorite chicken place – since the opportunity would present itself.

Anyway, we’ll see what the weekend brings. Better go. I have a few things to do before I go in that I’ve not been able to do the last two evenings since I was cooking.

    I had to google “shoepeg corn” as I had never heard of it. Must be a southern thing! Or at least an American thing as I am in Canada 😉

      Seems to be smaller and perhaps a lighter taste- certainly lighter in color.
